Launch your hospitality career with hands-on cookery training from experienced chefs. This Certificate II teaches you essential food preparation, kitchen safety, and cooking techniques needed for entry-level positions in restaurants, hotels, cafes, and catering operations.
There are no essential entry requirements for this course. You must be at least 16 years old to enrol. While not required, it is recommended that you have access to a computer with a reliable internet connection. Upon enrolment, TasTAFE provides a Microsoft Office license. You should be prepared with standard items such as pens, notebook, and paper. Specific equipment, tools, or personal protective equipment will be provided or specified by your teacher.
The course covers core competencies in commercial cookery including: using food preparation equipment safely and effectively; preparing dishes using basic cooking methods such as grilling, frying, and boiling; working effectively in a commercial kitchen environment with colleagues; cleaning kitchen premises and equipment to hygiene standards; implementing hygienic practices for food safety; receiving, storing, and maintaining stock; and participating in safe work practices. Elective units available include first aid certification, preparing and presenting simple dishes and sandwiches, packaging prepared foods, preparing appetisers and salads, preparing stocks and sauces, preparing vegetable and fruit dishes, producing cakes, and demonstrating social and cultural sensitivity in hospitality settings.
